Cooking a delicious bean salad for the winter

Bean lovers will get real pleasure from this salad in the cold seasons.

Vegetable bean salad can be used as a salad for potatoes, as a dressing for borscht and stew.

Ingredients for vegetable bean salad

  • Tomatoes – 3 kg;
  • onion – 1 kg;
  • carrots – 1 kg;
  • bell pepper – 1 kg;
  • refined oil – 1 stack;
  • vinegar – 0.5 stacks;
  • salt – 2 tbsp. l.; l.;
  • sugar – 2 tbsp. l.; l.;
  • hot ground pepper to taste;
  • beans – 6 stacks.

Cooking vegetable bean salad for the winter

Soak the beans for 8 – 10 hours. Cook until tender.

Drain and let cool.

Chop the onion, rub the carrots on a coarse grater. Simmer them for 30 minutes in a bowl with a thick bottom in oil.

Cut tomatoes and peppers, add to onions and carrots.

Mix everything, put beans, sugar, salt, vinegar 9%, pepper to taste. Cook the whole salad for an hour, stirring occasionally.

In hot sterile jars, lay out our ready-made hot bean salad, roll up the lids, turn over, wrap until completely cooled.

From this amount of products, + – 9 liters of salad are obtained.
