Tomatoes – 3 kg.

  • Bulgarian pepper – 4 kg.
  • Garlic – 2 heads.
  • Salt – 2 tbsp.
  • Sugar – 130 g.
  • Vegetable oil – 150 ml.
  • Vinegar essence (70%) – 1 tbsp. (or vinegar (9%) – 8 tablespoons).

    We weigh all products with stalks and seeds.

    Cut out a “rod” in the tomatoes, grind in a meat grinder.

    Peel the garlic, also grind it in a meat grinder.

    Peel the pepper from the stalks and seeds, cut in half, each half into 4-5 more parts. Peppers for lecho are best chosen thick-walled.

    Pour the tomatoes into a saucepan (9-10 liters), put on medium heat, let it boil, boil for 20 minutes, stirring occasionally and removing the foam.

    After 20 minutes of boiling, add salt, oil, sugar, stirring and let it boil for another 5 minutes.

    Add pepper to the boiling tomato mass. 10 minutes after laying the pepper, gently knead it with a large spoon, wait 5 minutes and knead again, another 5 minutes and mix again. During this time, the pepper should be completely immersed in the tomato mass.

    As soon as the pepper has settled in the juice level, add a tablespoon of vinegar essence.

    Cook for another 15 minutes, stirring occasionally, over medium heat. Add ground garlic, boil for another 5-10 minutes.

    We lay out the lecho in sterile jars, apply to the crown, hermetically close the lid.

    Turn the jars upside down, leave to cool.

    We offer to stock up on zucchini for the winter. Namely , squash caviar with mayonnaise and tomato paste. This recipe can be used both for quick cooking and for preservation.

    Ingredients for zucchini caviar with mayonnaise and tomato paste

    zucchini – 3 kg;

  • carrots – 1 kg;
  • mayonnaise – 250 ml;
  • tomato paste – 250 ml;
  • garlic – 10 cloves;
  • sugar – 100 g;
  • s alt – 1 tbsp;
  • vegetable oil – 100 ml;
  • table vinegar 9% – 2 tbsp ;
  • ground red pepper
  • Cooking squash caviar with mayonnaise and tomato paste

    We remove the skin from the zucchini, remove the seeds and cut into pieces.

    Pass through a meat grinder along with peeled garlic cloves and carrots.

    Spread the mixture in a large saucepan.
