Ingredients for vegetable salad for the winter
- bell pepper – 1 kg;
- carrots – 1 kg;
- tomatoes – 1.5 kg;
- eggplant 1 kg;
- garlic – 200 g;
- vinegar 9% – 100 ml;
- vegetable oil – 500 ml;
- sugar – 200 g;
- salt -70 g;
- parsley – 1 bunch.

Cooking vegetable salad for the winter
Rinse all vegetables well and leave excess water to drain, or dry with a paper towel.
Peel the pepper from the seeds and cut into thin long strips.
Do not peel the eggplant, cut into large cubes.
Peel the carrots, grate on a coarse grater.
Chop the tomatoes, grind in a blender until puree. Grate the garlic on a fine grater, finely chop the parsley.
For the marinade, mix vegetable oil, vinegar, salt and sugar in a separate saucepan, bring to a boil and remove from heat.
Put all vegetables and herbs in a large saucepan, mix and pour marinade, put on fire. Simmer under a closed lid for 40-45 minutes (this is how the maximum amount of vitamins is preserved), stirring occasionally.
Put the finished hot salad in sterile jars and roll up the lids.
