Squash caviar with mayonnaise and tomato paste – recipe

Ingredients for zucchini caviar with mayonnaise and tomato paste
- zucchini – 3 kg;
- carrots – 1 kg;
- mayonnaise – 250 ml;
- tomato paste – 250 ml;
- garlic – 10 cloves;
- sugar – 100 g;
- s alt – 1 tbsp;
- vegetable oil – 100 ml;
- table vinegar 9% – 2 tbsp ;
- ground red pepper

Cooking squash caviar with mayonnaise and tomato paste
We remove the skin from the zucchini, remove the seeds and cut into pieces.
Pass through a meat grinder along with peeled garlic cloves and carrots.
Spread the mixture in a large saucepan.
After that, add mayonnaise, tomato paste, sugar, vegetable oil, 2 pinches of pepper; Salt and mix.
Then bring the mixture to a boil and simmer over low heat for 2.5-3 hours.
Before the end of cooking, pour in vinegar, mix.
We put the vegetable mass in sterilized jars and immediately roll up or cool and serve.
