Zucchini in tomato sauce for the winter

Ingredients for zucchini in tomato sauce

  • Zucchini – 3 kg
  • carrots – 4-5 pcs
  • hot red pepper – 2 pcs
  • garlic – 100 g
  • tomato paste – 0.5 l
  • sunflower oil – 0.5 l
  • vinegar 9% – 100 ml
  • sugar – 2 tbsp. l.; l.
  • salt – 2 tbsp. l.; l.
  • water – 0.5 l

Cooking zucchini in tomato sauce for the winter

Wash young zucchini and cut into slices, if the zucchini is large, cut the slices in half, and if you use overripe zucchini, then remove the skin from them and remove the middle.

In a meat grinder, grind carrots, garlic, hot peppers.

You need to put zucchini in a saucepan, pour a mixture of carrots, hot peppers and garlic on top.

Next, you need to add tomato paste, vegetable oil, vinegar, sugar, salt, water. Mix.

Simmer for 20 minutes from the moment of boiling, then transfer to sterile hot jars and roll up.
