Author’s Note. Do not spare the garlic, the more you put it, the better (I put about 1 medium head of garlic per 1-1.5 kg of cucumbers).
Fill with water, add 2 tablespoons for each liter of water. Salt. Press on top with a plate, put a half-liter jar of water.
Leave the cucumbers for 4-7 days. Fermentation time depends on the size of the cucumbers and the air temperature. Cucumbers should ferment well, completely change color to dirty green.
Cucumbers, remove from the brine, rinse with cold water, put in a colander, put in jars (without greens).
Filter the brine through cheesecloth, put on fire, bring to a boil. Pour the cucumbers, cover with sterilized lids, leave for 15 minutes.
Pour the brine into a saucepan, bring to a boil, pour the cucumbers again, leave for 15 minutes.
Pour the brine into a saucepan again, bring to a boil, pour over the cucumbers and tighten with metal lids.
Turn the jars upside down, wrap them with a warm blanket.

Cucumber salad “Fingers” turns out to be very tasty and spicy. Such cucumbers can be twisted in jars for the winter, or you can prepare a bright fresh appetizer for the dining table by releasing the cooking and preservation process.
Cucumber salad “Fingers”is perfectly stored in an apartment, at room temperature.
The recipe uses a glass with a capacity of 250 ml.
From the given amount of ingredients, 4 cans of 0.5 liters of lettuce are obtained.

- Cucumbers – 2 kg.
- Sugar – 1/2 cup.
- Vinegar – 1/2 cup.
- Vegetable oil – 1/2 cup.
- Salt – 2 tbsp.
- Ground black pepper – 1 tbsp.
- Garlic – 1 head.
- Parsley – to taste.

Cut the cucumbers into four lengthwise crosswise, and then in half. If the cucumbers are small, it is enough to cut in half lengthwise.
Transfer the cucumbers to a saucepan, add pepper, s alt and sugar, knead well.
Add vegetable oil, vinegar, chopped garlic and finely chopped parsley (you can do without it), knead well, leave for 4 hours.
We put the cucumbers on the stove, cook for 7 minutes from the beginning of boiling, reduce the heat to a minimum, quickly put the cucumbers in sterilized jars, tighten them tightly with sterilized lids.
Attention! Boil cucumbers for no more than 11 minutes, so you need to twist quickly enough.
Turn the jars upside down, cover with a warm blanket, leave to cool.

Tomato and cucumber salad for the winter
Tomato and cucumber salad for the winter is a very easy to prepare and very tasty salad. The salad consists of a small number of ingredients, is quite economical, and in winter it will be a real find.

- Cucumbers – 2 kg.
- Tomatoes – 2 kg.
- Onion – 1 kg.
- Dill – 150 g.
- Vegetable oil – 120 ml.
- Salt – 6 tsp.
- Sugar – 6 tsp.
- Vinegar (9%) – 4 tbsp.

Cut the cucumbers into rings or half rings.
Cut the onion into quarters into rings (not too thin).
Cut the tomatoes into slices (it is better to take fleshy tomatoes).
Finely chop the dill.
Mix all the ingredients in a large saucepan, add salt, sugar and vegetable oil. Put on a small fire. Vegetables should start juice. When the mass boils, add vinegar, boil for 3 minutes. And quickly twist the salad into sterilized jars.
From the given amount of ingredients, approximately 9 cans of 0.5 liters are obtained.
