Zucchini salad for the winter “Ankle Bence “

Another delicious preserves for the winter from zucchini is zucchini salad “Ankle Bens”.

This canned zucchini “Ankle Bens” will perfectly complement main courses in winter. Also, such preservation can be safely served on the festive table.

Ingredients for zucchini salad “Ankle Bens”

Zucchini – 1.5 kg

Bulgarian pepper (sweet) – 6 pieces

Onion – 6 pieces

Tomatoes – 1 kg

Vegetable oil – 2/3 cup

Sugar – 2/3 cup

Salt – 2 tbsp. l.; l.

Vinegar (9%) – 0.5 cups

Cooking zucchini salad “Ankle Bens”

We start preparing the preservation by preparing the marinade: mix oil, sugar, s alt and vinegar. Knead everything well. Wash the zucchini well, cut into cubes. Cut the onion into half rings. Tomatoes are passed through a meat grinder or blender. Cut the pepper into strips.

We put the marinade on the fire, when it boils, add the zucchini, cook for 5 minutes, stirring occasionally. Next, send the onion to the pan, also cook for 5 minutes. Add pepper, and cook again for 5 minutes. Pour the tomatoes, cook for 10 minutes, stirring occasionally.

Put the hot salad in sterilized jars, roll it up. That’s it, the salad for the winter “Ankle Benz” is ready

From the specified amount of ingredients, 3-3.5 liters of salad are obtained.
