Sun-dried tomatoes for the winter – recipe
We are preparing the most popular Italian canned tomatoes for the winter.

Sun-dried tomatoes can be added to bread, salads, pasta, sauces, and just eat as a delicious snack.
Ingredients for making sun-dried tomatoes
Yield 100 gr.
- 1 kg. tomatoes “cream”
- olive oil
- garlic
- Dried herbs
- hot pepper
- salt

Cooking sun-dried tomatoes
Tomatoes need to be washed well and cut each lengthwise into 2 parts.
Tip: You can remove the seeds and all the liquid so that the tomatoes dry faster and more evenly, but in order to preserve the maximum aroma of summer tomatoes, you can not do this (it is better to remove the stalks and white flesh around it).
Line a large baking sheet with parchment, and arrange the tomatoes, cut side up, so that they do not touch each other.
Temperature for sun-dried tomatoes
Choose one:
- Preheat the oven to 100 degrees and dry the tomatoes for 3-4 hours.
- Preheat the oven to 50 degrees and dry the tomatoes for 16-20 hours.
- Preheat the oven to 220 degrees, place a baking sheet with tomatoes in it, turn off the oven and leave for 8 hours.
- Use an electric dryer for vegetables and fruits according to the instructions.
The specified time is a guideline, and you need to determine the readiness of sun-dried tomatoes by their appearance. If the tomatoes wrinkled, acquired a darker shade, and the moisture “came out” – they are ready. In order not to miss this moment, periodically look into the oven, and some time before the end, you need to turn the baking sheet with sun-dried tomatoes over so that all the tomatoes are dried evenly.

Ways to store sun-dried tomatoes
- Sun-dried tomatoes should be put in jars and pour olive oil. You can add a little finely chopped garlic, dried herbs, hot chili, wine vinegar, salt, pepper and other spices to the oil so that sun-dried tomatoes are gradually saturated with additional flavor and aroma during storage.
- Put the sun-dried tomatoes in a jar with a lid and close tightly: so they are also well stored, and, importantly, retain their original taste.
