Orange jam with rhubarb

Recipe for making orange jam with rhubarb

Ingredients for orange jam with rhubarb:

  • Rhubarb -1 kg
  • Orange – 3 pcs
  • Sugar – 1.5 kg

Preparation of orange jam with rhubarb

For jam, we use only rhubarb stalks (juicy rhubarb stalks are suitable for canning in April – early June). We clean the stems – remove the upper thin skin. After that, cut the stems into small pieces.

Put the prepared rhubarb in an enamel pan and cover with sugar. (Both rhubarb and orange are quite acidic, so we take sugar about 1: 1 to their total weight.) We leave the rhubarb for a few hours so that under the influence of sugar it releases its juice.

Let’s prepare the oranges. For a kilogram of rhubarb, we take two or three pieces of a medium-sized orange. We wash them properly, preferably with a brush and soap. Cut off the orange peel with a vegetable peeler.

We put a pot of rhubarb on the fire and heat it over medium heat, stirring occasionally, we need the sugar to completely dissolve. If you see that rhubarb has not enough juice, you can add a little water. Then add the orange peel and continue to heat until boiling. After the jam boils, cook it for another 10-15 minutes. Do not forget to stir and remove the foam.

Free the pulp of the orange from the white partitions and cut into small pieces.

Add orange pulp to the jam. Bring to a boil again, also cook for 10-15 minutes. The jam turns out to be thick, you need to stir often, otherwise it will burn. At this stage of making orange jam with rhubarb, you can add more vanillin, an interesting combination of flavors is obtained.

Orange jam with rhubarb is ready, it remains to put it in hot sterilized jars.

Roll up the jars and leave until they cool completely, store in a cool place.
